🇲🇿 Como preparar TAPIOCA com Polvilho Doce!
Coloque o polvilho doce num recipiente aberto.
Adicione, aos poucos, a água, sempre mexendo e misturando com uma colher. O segredo está nesta fase: não deixe a farinha ficar muito molhada, tem que ficar húmida mas soltinha em pequenas bolhinhas que se pegam e se desfazem facilmente nos dedos.
Depois use uma peneira para coar e voltar a formar uma farinha solta que deve espalhar bem (sem apertar ou calcar) numa frigideira anti-aderente (sem untar).
Quando a farinha começar a juntar-se e a formar um crepe, junte o recheio pretendido e dobre ao meio.
Outra maneira de preparar: coloque o polvilho numa tigela, cubra com água e misture. Deixe reposar por três horas até decantar. Depois deite fora a água e deixe reposar mais 1 hora. Depois use uma peneira para coar e voltar a formar uma farinha solta que já poderá colocar na frigideira.

Put the cassava starch in an open container.
Gradually add water stirring and mixing with a spoon. The secret is that you don`t let the flour get too wet or too dry, it has to be moisty but loose so you can make small balls that break easily in your fingers.
Then use a sieve to strain back into a loose flour that should be spread well (without pressing) in a non-stick frying pan (with no oil).
When the flour starts to come together and form a crepe, add the desired filling and fold in half.
Another way to prepare: put the starch in a bowl, cover with water and mix. Let stand for three hours until decanting. Then discard the water and let it rest for another 1 hour. Then use a sieve to strain back into a loose flour that you can put in the pan.

O típico pão de queijo brasileiro – um delicioso pãozinho sem glúten!
🇬🇧 Typical Brazilian cheese bread with tapioca flour (cassava starch)
Ingredients
500g polvilho doce (tapioca starch)
1 cup of milk (240ml)
Half a cup of oil, coconut oil (120ml) or butter
50g cheese
1 egg
1 small spoon of salt
Preparation
Boil the milk, with the oil and the salt. Then add to the flour and mix well.
Later add the egg and finally the shredded cheese.
Knead well until you can form small balls and then bake at 200º for 20-30 minutes, until golden.
If the dough does not have the desired consistency, add a little water.
